My family loves a hot breakfast and occasionally I will make something I have to share. This is one recipe that is DELICIOUS and SUPER HEALTHY!
My kids even devour these!
Becki's add an extra 10 years to your life bran muffins:
1 1/2 cup bran cereal
1 cup boiling water
1/2 cup applesauce
1 1/2 cup brown sugar
1/4 cup honey
3 whole eggs
2 cups buttermilk
2 1/2 cup whole wheat flour
3 1/2 tsp. baking soda
1 1/2 cup oatmeal
1 1/3 cup shredded carrots
3/4 cup raisins
1 tsp. salt
1/2 cup walnuts or pecans
Pour boiling water over bran and set aside. Beat applesauce, sugar and honey until well blended. Add eggs, one at a time, beating well after each addition. Stir in buttermilk and wet bran cereal. Mix all dry ingredients together and add to egg mixture. Mix well. Stir in oatmeal, carrots, raisins and nuts. Can let stand overnight if desired or bake in muffin pan at 350* for 15-20 minutes.

How awesome it is to read all your blogs- I am going to do a sick day more for me- I need to just do 'nothing with the kids" and laugh and play. I miss the good ol days when they did not have thousands of activities after school and all. it is great to see them grow yet holding on to precious moments are what mom are called to do. You are a great Mother!!!!!

I was looking for recipes and I find these muffins that looks delicious, but when I read the recipe I couldn't fine when did you add the applesauce and the measure of the oil. If you have a chance to solve this doubt to me, I will really appreciate it.

Hi Mara! Thank you for pointing out that mistake on the recipe. There is actually NO oil in this recipe I just forgot to change it to applesauce. ENJOY!
